Does meat cause cancer or is it less about the meat we eat and more about what we DON’T eat?
Nutrition is complex. One of the problems with nutritional research is that it’s basically impossible to do randomized control trials longer than a year. Therefore, it’s almost impossible to get direct intervention data with regards to disease development since diseases like heart disease and cancer take years and even decades to develop. What we are left with is epidemiology and cohort studies. The problem with this data is that it’s impossible to isolate our variables.
Repeatedly in epidemiology meat intake is associated with increased cancer risk, particularly processed meat. But there are many confounding variables. People who eat more meat also are more likely to smoke, drink, eat more calories, eat less fruits/veggies and live an overall more unhealthy lifestyle.
This study sought to stratify the risk of cancer development with low, medium, and high intake of meat & processed meat when co-ingested with low, medium, and high intake of fruits and vegetables.
What they found was that there was a linear DECREASE in cancer risk with increasing fruit & vegetable intake. Even in the highest meat intake, if they also had a high intake of fruit & veggies, there was less (not significant tho) risk of cancer development than in the group eating the lowest amount of meat (when fruits & vegetables were low). This suggests that meat might not be carcinogenic but rather people who eat high meat do so while also displacing fruits and vegetables and THAT is what may increase cancer risk.
Processed meat did have an increased risk of cancer at every level of fruit and veggie intake although they did attenuate risk.
Takeaways: if you are going to consume high levels of meat try to stick to limit processed meat & make sure that you are not displacing your fruits & vegetables because of increased meat intake.
